These are light and fluffy, everything you could wish your gnocchi to be. I love how easy they were to make! The hardest part is cooking the potatoes (which really isn't hard at all), and I made that easier by doing it in the microwave, cutting the time to only a quarter of what it would take if you baked them in the oven.
I'm so excited about this recipe. I think it's going to be something I'm going to make time and time again; I'll probably try making a larger batch at some point and freezing them for later, too. I love watching them when they're in the pot cooking as each one floats up to the top. I was squealing with delight at this. Dad, we found ourselves a great gnocchi recipe! ;)
