Info Post
Alex is headed out to dinner with his sister tonight, so I was on my own for dinner.  This meant something VERY easy and quick, albeit extremely flavorful/delicious.  I'm sure everyone's seen how into tomato bread I am (here..and here.), so it's really no surprise that I made myself tomato bread in enough quantity and with enough extra ingredients to consider it dinner.  I'm supposed to be studying tonight for the three tests I have coming up this week, so I figured eating this while starting studying was a great idea; it turned out being a bit too messy, but I pretended I was studying anyway.
I took two slices of Arnold's Double Fiber bread and sprinkled it with a combination of parmesan/romano, mozzarella and sharp cheddar.  I then sprinkled some Onion Onion, Garlic Garlic, fresh onion and a dash of chili peppers over that.  I then made a nice little layer of spinach leaves and then topped that with thick tomato slices.  I then placed two slices of pepperoni on top of that and stuck it all under the broiler until the pepperoni was sizzling, and the bread was nice and toasted.  SO tasty!

I also made some raspberry chocolate scones; one of my suitemates, Maddie, got me a mix for my birthday!  I whipped them up today for the suite while Alex made himself a snack.
The dough was a bit sticky, so I didn't get to shape them how I wanted to, but they are extremely light and fluffy!  I've never really been a huge fan of scones, but I think I may need to start making them soon!
