Most people that view this blog know that my birthday is on February 29th, so while most would see it unlucky that I only have a real birthday every four years, it definitely has its perks. It always ends up being a two day celebration because nobody knows which day it really should fall on. Technically, I should celebrate March 1st, since it IS the day after the 28th, but it's also nice to be able to still have my birthday during the month OF my birthday, so the 28th is a normal celebration day as well. This year, I had a physiology exam on the 28th, so there wasn't much in terms of celebrating that day. We made a simple dinner of broccoli and spinach frittatas with tomato bread (which you can find out how to make here, substituting the asparagus for spinach). We upped the serving sizes to about 2 1/2 eggs each to make sure we were filled up.
This time for the tomato bread, we put it under the broiler with the tomatoes to make them extra warm and slightly shriveled - I cannot get enough of this bread!
