At the very beginning of fall semester, Alex's mom gave us some tomatoes and a whole wheat baguette and told us to make some bruschetta.  So that's what we did.  It made way too much for just us, so we shared it with my suite.  The next time we make it, we'll probably add some balsamic - we had some really good bruschetta at Caffe Espresso that had a hearty drizzle of balsamic over it.
We were merely following orders, but this bruschetta is a combination of diced tomatoes, diced onion, italian seasoning, minced garlic, parsley, parmesan, salt, pepper and olive oil.  We didn't measure, just sort of threw it together, and it turned out really well.  Don't worry about measuring, just add a bit at a time and taste it!
