Mushroom Bruschetta
Info Post
For mine and Alex's one year anniversary (back in December), we went to Bravo for dinner and then saw Harry Potter and the Deathly Hallows Part 1. At dinner, our appetizer ended up stealing the show from our meals - we got their Bruschetta with Mushrooms and Boursin. It was outstanding. Ever since, I've wanted to do something similar with mushrooms. Tonight, we needed to finish up our baby bella mushrooms, and I really haven't been feeling well today to allow myself to make anything more involved, so I decided I'd throw together some sort of bruschetta. Theirs had tomatoes, too, which we didn't have, so it's not really that similar, but it still was quite tasty.
Basically, I sautéed the mushrooms, threw in some spinach, italian seasonings, pepper and red wine vinegar, all in olive oil. Once the mushrooms were cooked down and juicy, I threw in some asiago and mixed it all up so it'd be melty. No recipe here..best to just eyeball it!
