The waitress gave us a little tub of their greek dressing, so I slathered a bit on each pita and then sprinkled some Garlic Garlic and Onion Onion. Next came some frozen spinach, asiago and mozzarella! Popped it in the oven at about 430ºF for about 10 minutes, and the cheese was perfectly melty and the pitas nice and crispy. I'm thinking I might need to look into making our own pitas..this was too delicious not to make again SOON!
Cheesy Spinach Pitas
Info Post
On Tuesday, Alex's mom came and picked us up and took us to the DMV so I could get my NY state permit (yes, I know, I'm almost 19 and I don't have a license..soon enough!). Alex got hit in the side of his car a few days before we came back to school, so he hasn't had a car. He got it back on Tuesday, though, after we went to the DMV! All fixed up! I got my permit, and then we decided to go out to dinner to Olympia, a really nice little greek restaurant close to Alex's house. It's the most delicious food, and they have some of the best pitas I've ever tasted - we had lots of leftover pitas, so we made up a nice little appetizer with them tonight.
